Why are they called Chicken Cordon Bleu?
Chicken cordon bleu gets its name from the French term for blue ribbon (denoting excellence), this dish actually stems from Switzerland. The base of this dish, the breaded chicken is commonly known around the world as schnitzel.
Place each breast in a 2-qt. microwave-safe dish coated with cooking spray. Cover loosely and microwave on high for 5-7 minutes. Turn each breast over and cook for another 5-6 minutes or until juices run clear.
