What is Provolone Cheese made out of?
Provolone is an Italian cheese. It is an aged pasta filata cheese originating in Casilli near Vesuvius, where it is still produced in pear, sausage, or cone shapes 10 to 15 cm long. Provolone-type cheeses are also produced in other countries.
Provolone, like all pulled curd cheeses, is great — and more intense in flavor — when melted. Think hoagies, casseroles, panini, pizza, and baked pasta dishes. In the North of Italy, from where it hails, it’s a straight-up, no-nonsense table cheese, and does superb work standing up to big, Northern Italian reds.
